THE RICHNESS OF THE LAND OF FINCA CARAZA

Our olive grove is more than 30 years old and its roots are feeding by the land of Finca Caraza. It is a land of a loamy texture with old brown slate, characteristic of this area, which contains a great amount of minerals.

OUR OLIVE TREES “DRINK” PURE WATER

Our subsurface drip irrigation system supplies water from 100 m below the surface. This water has an excellent quality of pH7, like the pure water.

EARLY HARVEST OF OUR OLIVES

A fundamental aspect for the oil quality is the early harvest. Our olives have been collected in November in order to reduce the acidity to the minimum and to increase the fruity taste. We only collect the olives from the tree and not from the ground. We use bales to avoid the mixing of both kinds of olives.

OIL MILLING JUST AFTER THE HARVEST

Another fundamental aspect for obtaining a low acidity is to milling the olives just after the harvest in order to stop the oxidation process. In the afternoon of the same day, we extract our olive through mechanical procedures. Thus, we used a small mill completely cleaned before each use to guarantee that the origin of the oil obtained comes exclusively from our olives.

COLD-EXTRACTION

The cold-extraction confers it a high content of antioxidant and essential fatty acids and allows the preservation of all the polyphenols, which are very beneficial to our health.

WE ONLY USE ORGANIC FERTILIZERS

We only use organic fertilizers and natural amino acids made by ourselves. With this action, we contribute to the preservation of the environment and we restore the original taste to olive oil by producing a smaller quantity but better and healthier.

CAPTURE OF PLAGUES WITHOUT INSECTICIDES

We have promoted the capture of plagues by using the mass trapping method with hormones and other appropriated substances for each plague. So, we have eliminated the insecticides that affect both harmful and beneficial insects to create a protected habitat, where we can see among other insects: praying mantis, ladybird, Chrysoperla camea, and Chrysopidae.

PRINCIPAL CHARACTERISTIC OF OUR OLIVE OILS

OROLIVIA COUPAGE: MAKE THE DIGESTION EASIER

Orolivia –Esencia Milenaria Producción Limitada- contains a 60 % of Manzanilla Fina, and a 40 % of Picual and Marteña olives. It is not very usual the use of the Manzanilla Fina variety because of its low fat content but its oil is of high quality and oxidative stability. In addition, it makes the digestion easier and provides the human organism with calcium and iron. Furthermore, Manzanilla Fina variety confers the oil a very pleasant fruity taste. Moreover, the Picual olive is one of the varieties with the highest number of nutritional properties due to its high content of oleic acid and essential fatty acid, such as Omega 3 and 6. In addition, the Picual variety contains a large amount of tocopherols (Vitamin E) with antioxidant properties.

OROLIVIA 100% MANZANILLA: HIGH ANTIOXIDANT PROPERTIES

It is a fruity oil type with a pleasant taste and a peculiar fresh herbs aroma. In the palate, it is sweet with harmonious notes (almost imperceptible) of sweet, spicy and bitter flavours. It is made only with the Manzanilla Fina Sevillana variety. It presents a level of acidity lower than 0.5% and a peroxide value lower than 7.8 meq. These characteristics allow a period of conservation, which ranges between 18 and 24 months. It has a balanced fatty acids profile and the sterol level shows the absence of cholesterol. It does not contain carbohydrates, proteins, cholesterol, dietary fibre nor sodium.

RESULT: OROLIVIA, AN ELIXIR OF HEALTH

All the above-mentioned characteristics have a bearing on the oil acidity, which is one of the principal parameters that define the healthy index of an extra virgin olive oil.

EXTREMELY LOW ACIDITY LEVEL

It ranges between 0.08º and 0.3º depending on the season. This value is, on average, four times lower than the stated level by the EU, which is 0.8º. Thus, Orolivia olive oil turns into an elixir of health that makes your digestion easier. This is the reason why it is especially recommended for children and adults with stomach disorders.
